|Chopped onion||2 Cup (32 tbs)|
|Chopped capsicum||1 1⁄2 Cup (24 tbs)|
|Okra pods||18 (young)|
|Corn||1 Cup (16 tbs) (fresh or canned)|
Cut up bacon and fry till crisp, add onion and capsicum and fry for 5 minutes, stirring all the time.
Clean okra pods.
Peel and quarter tomatoes and add both to the mixture in the pan.
Simmer 10 minutes or till dry.
Stir in well drained cooked corn.
Season to taste and continue simmering for 10 minutes.
It is important to retain just enough moisture to stop the mixture sticking.
