|Peeled seeded and chopped tomato||4 Cup (64 tbs), peeled|
|Chopped onion||2 Cup (32 tbs)|
|Canned golden hominy||31 Ounce, drained (2 cans, 15 1/2 ounce each)|
|Chili powder||1 Teaspoon|
|Garlic powder||1⁄4 Teaspoon|
|Shredded reduced fat monterey jack cheese||2 Ounce (1/2 cup)|
Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
Add tomato and onion; saute until onion is tender.
Stir in hominy and next 4 ingredients.
Spoon into a 2-quart baking dish coated with cooking spray.
Bake, uncovered, at 350° for 25 minutes.
Sprinkle with cheese; bake 5 minutes or until cheese melts.
