Feista Chili

Here's another twist on chili! Adding ginger and fresh vegetables gives it a unique flavor and is a great way to get some extra veggies into your daily meal plan. Created by ERichard, Tuesday, 14 December 2010
Ingredients
  Onion 1 Large, chopped
  Water 4 Cup (64 tbs)
  Garlic clove 5 , minced
  Heart of celery 1 , chopped
  Fresh ginger 1 Tablespoon, minced
  Red kidney beans 6 Cup (96 tbs), drained and rinsed
  Black bean 1 1⁄2 Cup (24 tbs), drained and rinsed
  Fire roasted tomatoes 3 Cup (48 tbs), diced
  Fresh corn/Frozen corn 2 Cup (32 tbs)
  Chili powder 1⁄2 Teaspoon
  Salt To Taste (Optional)
  Dairy-free sour cream To Taste (Optional)
  Chopped scallions 3 Tablespoon (Optional)
Directions

MAKING
1. Heat large pot over medium high heat. Add the diced onion and cook for two minutes, adding water as needed, stirring frequently.
2. Put in the garlic and stir for 2 minutes.
3. Add the celery and ginger and continue to stir for 2 more minutes.
4. Put in the beans, tomatoes, corn and spices. Bring to a boil, lower the temperature and simmer for 30-45 minutes.

SERVING
5. Top with the optional dairy-free sour cream and chopped scallions. Serve with corn bread.
