Bourbon Glazed Prawns with Old Fashioned Cocktail
|Chopped shallots||1 Tablespoon|
|Garlic||1⁄2 Tablespoon, chopped|
|Chili flakes||1 Pinch|
|Brown sugar||1⁄2 Teaspoon|
|Orange juice||3⁄4 Cup (12 tbs) (1 Small Cup)|
|Key lime||1 , juiced|
|Oil||4 Tablespoon (To Cook, Or As Needed)|
|Cilantro||2 Tablespoon (For Garnish)|
|Peach||1⁄2 , cut in to wedges|
|Cherries||3 , cut in half|
|Ice||1⁄2 Cup (8 tbs) (Or As Required)|
|Plum slices||1 (For Garnish)|
1 For the prawns, in a skillet heat some oil.
2 Add the prawns and sprinkle with salt and pepper.
3 Let cook until golden.
4 Remove from the skillet on to a paper towel to absorb extra oil.
5 In the same skillet, add the shallots, garlic, chili flakes and brown sugar.
6 Cook, stirring for about a minute.
7 Remove from the flame and carefully pour in the bourbon.
8 Return to the flame and let the bourbon ignite.
9 Carefully pour in the orange juice to extinguish the flame.
10 Add in the key lime juice and paprika, stir well.
11 Return the prawns to the pan and allow to cook in the gravy.
12 Add in the butter and cook stirring.
13 Transfer to a serving dish and garnish with cilantro.
14 For the cocktail, in a large glass put the peach and cherries.
15 Add in the sugar and using a pestle, muddle the ingredients on the bottom of the glass.
16 Pour in the bourbon and pack the glass with ice.
17 Transfer the drink to a cocktail shaker tin and shake well to blend.
18 Fill an old fashioned glass with ice and strain the cocktail into it.
19 Garnish the cocktail with a slice of plum and serve along with the bourbon glazed prawns.
