Maine Blueberry Pancakes
|Fresh blueberries||1 1⁄2 Cup (24 tbs)|
|Sifted all-purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||2 Tablespoon|
|Eggs||2 , beaten|
|Milk||1 1⁄4 Cup (20 tbs)|
|Cooking oil||19 Tablespoon (2 Cups For Frying)|
Wash blueberries; drain very thoroughly.
Sift together flour, sugar, baking powder, and salt.
Combine eggs, milk, and oil; add dry ingredients.
Beat till smooth.
Gently fold in drained berries.
Bake pancakes in hot, lightly greased skillet. (Electric skillet 375°.)
Cook till tops are covered with tiny bubbles; turn and brown on other side.
