Easy Chicken Gumbo
|Chicken parts||1 Pound|
|Sliced onion||3⁄4 Cup (12 tbs)|
|Canned stewed tomatoes||16 Ounce, chopped (1 Can)|
|Frozen sliced okra||10 Ounce, thawed (1 Package)|
|Canned whole kernel corn||8 Ounce (1 Can)|
|Chicken broth||2 Cup (32 tbs)|
|Hot pepper sauce||2 Dash|
|Garlic powder||1⁄8 Teaspoon|
Set Power Select at HIGH.
In 3-quart casserole dish, arrange chicken.
Heat, covered, 6 to 8 minutes or until tender; remove chicken and cool.
Into casserole, add onion and heat 3 minutes; stir in flour, tomatoes, okra, corn, broth, salt, hot pepper sauce, garlic and pepper.
Heat, covered, 5 to 7 minutes, stirring twice at HIGH.
Set Power Select at MEDIUM.
Heat, covered 8 to 10 minutes, stirring twice.
Meanwhile, remove chicken from bones.
Add to soup and heat, covered, 4 to 6 minutes at MEDIUM.
Let STAND, covered.
5 minutes before serving.
