Crispy Popovers

  Sifted all purpose flour 1 Cup (16 tbs)
  Salt 1⁄4 Teaspoon
  Milk/7 tablespoon. evaporated milk and 7 tablespoon water 14 Tablespoon
  Eggs 2
  Melted shortening 1⁄2 Teaspoon

Put your muffin pans or thick custard cups into a hot oven of 450°F to heat just before you start to make the popovers.
Sift together the flour and salt; then add milk gradually, while beating with a spoon, to make a smooth batter.
Beat eggs until very thick, and add to batter mixture.
Add the shortening, then beat for 2 min with a hand or electric beater.
Fill the hot, greased or oiled muffin pans, or custard cups 2/3 full.
Bake them in a hot oven of 450°F for 30 min.
Then lower the heat to a moderate oven of 350ºF and bake for 10 min longer.
