Shrimps Newburg

Ingredients
  Cleaned cooked shrimp 1 Pound (Or Canned)
  Butter/Margarine 3 Tablespoon
  Flour 1 Teaspoon
  Lemon juice 1 Teaspoon
  Cream/Evaporated milk 1⁄2 Cup (8 tbs)
  Egg yolks 2 , well beaten
  Sherry 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

1. Melt the butter, blend in the flour, lemon juice and cream or evaporated milk. Stir and simmer 3 minutes.
2. Remove from the heat, add the egg yolks, stir in thoroughly, then add the sherry, salt and pepper and the shrimps.
3. Place over boiling water, cover and let stand to season 5 minutes or longer.
