|Cream of tartar||1⁄4 Teaspoon|
|Cold water||5 Tablespoon|
|Vanilla essence||1 Teaspoon|
Put the sugar, egg whites, cream of tartar and water into a bowl and set over a pan of simmering water.
Beat until stiff peaks form, which will take anything from 4 to 8 minutes.
