Poached Salmon American

Ingredients
  Salmon fillets 12 Ounce, boned (4 Fillets, 3 Ounce Each)
  Dry white wine 2 Tablespoon
  Lemon juice 1 Tablespoon
  Water 1 Cup (16 tbs)
  Diced carrot 1 Tablespoon
  Diced onion 1 Tablespoon
  Tomato 1 , peeled and diced
  Unsalted tomato juice 2 Ounce
Directions

Place the wine, lemon juice, and water in a heavy skillet and heat.
Place the salmon fillets in the hot liquid and sprinkle the diced vegetables over the salmon.
Cover and poach for approximately 10 minutes or until the fish is done.
Remove the fish and keep it warm.
Add the tomato juice to the stock and reduce the liquid by one-half.
Ladle the sauce over the salmon and serve hot.
