Southern Jam Cake
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Sugar||2⁄3 Cup (10.67 tbs)|
|Shortening||2⁄3 Cup (10.67 tbs)|
|Fruit preserves||1⁄2 Cup (8 tbs)|
|Milk||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Tablespoon|
|Nuts||1⁄2 Cup (8 tbs), finley chopped|
Place all ingredients in mixing bowl.
Blend at low speed, then beat at medium speed 2 minutes.
Grease 10- or 12-cup bundt or tube dish well.
Coat with graham cracker crumbs.
Spread batter in dish.
Place greased glass, open-end up, in 2 1/2- to 3-qt casserole before filling with batter. (For fruitcake, a clear bowl is preferable.)
Line flat bottom tube dish or 9x 5- or 8 x4-in loaf dish with wax paper and omit greasing, if desired.
