Spicy Creole Sausage

Ingredients
  Boneless lean pork 4 Pound, finely chopped
  Boneless fatty pork 2 Pound, finely chopped
  Salt 3 Teaspoon
  Freshly ground pepper 2 Teaspoon
  Cayenne pepper 1 Teaspoon
  Crushed dried hot red chilies 1 Teaspoon
  Paprika 1 Teaspoon
  Onions 2 Large, finely chopped
  Garlic 1 Clove (5 gm), finely chopped
  Thyme sprig 1 , finely chopped
  Parsley sprigs 3 , finely chopped
  Bay leaves 2 , finely chopped or crumbled
  Ground allspice 1⁄2 Teaspoon
  Sausage casing 180 Inch, washed and drained (About 5 Yards Of Preferably Sheep Casings)
Directions

Combine the lean and fatty pork, then season highly with the salt, pepper, cayenne, chili and paprika.
Add the onions and garlic, and the herbs and allspice, mixing thoroughly.
When well mixed, fill the sausage casings with the mixture, tying them in the lengths you desire.
