Easy Tomato And Shrimp Gumbo
|Onion||1 Medium, sliced|
|Bacon fat/Butter||1⁄4 Cup (4 tbs)|
|Water||1 Cup (16 tbs)|
|Canned stewed tomatoes||32 Ounce (2 Cans, 16 Ounces Each)|
|Green pepper||1 Cup (16 tbs), diced|
|Garlic||2 Clove (10 gm), crushed|
|Ground nutmeg||1 Teaspoon|
|Raw shrimp||1 Pound, shelled and deveined|
|Frozen okra||20 Ounce, defrosted, cut into 1 inch pieces (2 Packages)|
In 3-qt casserole place onion and butter.
Microwave at High (10) 3 Minutes, stirring after 2 minutes, until onion is limp.
In small bowl stir together cornstarch and water.
Add to onion along with tomatoes, green pepper, garlic, salt, nutmeg, pepper, shrimp and okra.
Cover Microwave at Medium High (7) 29 to 31 Minutes, stiring and recovering after 1/2 of time.
