Easy Tomato And Shrimp Gumbo

Ingredients
  Onion 1 Medium, sliced
  Bacon fat/Butter 1⁄4 Cup (4 tbs)
  Cornstarch 2 Tablespoon
  Water 1 Cup (16 tbs)
  Canned stewed tomatoes 32 Ounce (2 Cans, 16 Ounces Each)
  Green pepper 1 Cup (16 tbs), diced
  Garlic 2 Clove (10 gm), crushed
  Salt 2 Teaspoon
  Ground nutmeg 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Raw shrimp 1 Pound, shelled and deveined
  Frozen okra 20 Ounce, defrosted, cut into 1 inch pieces (2 Packages)
Directions

In 3-qt casserole place onion and butter.
Microwave at High (10) 3 Minutes, stirring after 2 minutes, until onion is limp.
In small bowl stir together cornstarch and water.
Add to onion along with tomatoes, green pepper, garlic, salt, nutmeg, pepper, shrimp and okra.
Stir well.
Cover Microwave at Medium High (7) 29 to 31 Minutes, stiring and recovering after 1/2 of time.
