Sugar Free Spoon Bread
|Enriched yellow cornmeal||2 Ounce|
|Cold water||1⁄2 Cup (8 tbs)|
|Boiling water||1 Cup (16 tbs)|
|Nonfat dry milk||1⁄3 Cup (5.33 tbs)|
|Baking powder||1 Teaspoon|
|Eggs||2 Medium, beaten|
|Imitation margarine/Diet margarine||2 Tablespoon, melted|
|Water||1⁄4 Cup (4 tbs)|
In medium saucepan stir cornmeal and salt into cold water.
Add boiling water; cook 5 minutes.
Remove from heat.
In small bowl, combine remaining dry ingredients.
Add eggs, margarine, and water, one at a time, mixing after each addition.
Stir into cornmeal mixture.
Pour into an 8x8-inch nonstick baking pan.
Bake at 425°F.
for 25 minutes or until firm.
