Apple Gingerbread Cobbler
|Apples||4 Medium, peeled, cored, and sliced to make 4 cups|
|Water||1 Cup (16 tbs)|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Cold water||1 Tablespoon|
|Gingerbread mix||14 Ounce (1 Package)|
|Whipped cream||1⁄2 Cup (8 tbs)|
In 1 1/2-quart casserole combine apples, 1 cup water, brown sugar, lemon juice, and cinnamon.
Micro-cook, covered, till apples are tender, about 6 1/2 to 7 minutes, stirring once.
Blend 1 tablespoon cold water into cornstarch; stir into apple mixture.
Micro-cook, uncovered, till thickened and bubbly, 1 1/2 minutes, stirring twice.
Turn into 12 x 7 1/2 x 2-inch baking dish.
Prepare gingerbread mix following package directions.
Pour 7 cup of the batter evenly over apple mixture.
Micro-cook, uncovered, till wooden pick comes out clean, about 5 minutes, giving dish a half turn after 2 1/2 minutes.
Serve warm with whipped cream.
