Fruit Coleslaw With Almonds
|Cabbage head||1 , finely shredded and crisped in ice water|
|Diced pineapple||1 Cup (16 tbs) (Fresh Or Canned)|
|Green grapes||1⁄2 Cup (8 tbs), cut in half and seeded|
|Dairy sour cream||1 Cup (16 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Grated orange rind||1 Teaspoon|
|Toasted blanched almonds||2 Tablespoon, shredded|
Combine the chilled cabbage with the pineapple and grapes.
Mix the sour cream, mayonnaise, sugar, lemon juice, and orange rind.
Toss the cabbage lightly but thoroughly with the dressing and mound on a platter.
Sprinkle with almonds.
Chill before serving.
