Basic Spoon Bread With Butter
|Milk/2 cup evaporated milk and 2 cup water||4 Cup (64 tbs) (Bottled)|
|Fine water ground corn meal||1 Cup (16 tbs)|
|Butter/Margarine / fat / salad oil||2 Tablespoon|
|Salt||1 3⁄4 Teaspoon|
|Eggs||4 , well beaten|
Scald the milk in a double boiler.
Gradually stir in the corn meal and cook until the consistency of mush.
Add the butter and salt, and pour over the well-beaten eggs gradually, while stirring.
Pour into a greased or oiled 1 1/2 qt baking dish.
Bake in a hot oven of 425ºF for 45 min.
Serve at once with plenty of butter.
