|Sifted all purpose flour||2⁄3 Cup (10.67 tbs)|
|Baking soda||1 Teaspoon|
|Baking powder||1 Teaspoon|
|Granulated sugar||1 Tablespoon|
|Yellow corn meal||1 1⁄3 Cup (21.33 tbs)|
|Eggs||2 , well-beaten|
|Sour milk/Buttermilk||1 2⁄3 Cup (26.67 tbs)|
|Melted shortening/Salad oil||1⁄4 Cup (4 tbs)|
Combine and sift together first five ingredients; stir in corn meal.
Combine eggs, milk, and shortening and add, all at once, to dry ingredients.
Stir until just blended, but no longer.
Turn into a greased pan 11" x 7" x 1 1/2" and bake in a moderately hot oven of 400º F for 30-35 min.
Cut in squares and serve hot.
