Lobster A La Newburg

  Butter/Margarine 6 Tablespoon
  Cubed cooked lobster 3 Cup (48 tbs) (Fresh Or Canned)
  Nutmeg 1 Dash
  Paprika 1 Dash
  Salt 3⁄4 Teaspoon
  Egg yolks 6
  Light cream/Heavy cream 1 1⁄2 Cup (24 tbs)
  Toast 2

Melt butter in the top of a double boiler, add lobster, and cook over direct low heat for 3 min.
Add seasonings, and Sherry, and place over hot water.
Beat the egg yolks slightly, add the cream, and mix well.
Add this mixture gradually to the lobster and cook, stirring until thickened.
Serve at once on toast or in Patty Shells.
