Charleston Shrimp Creole
|Onions||2 Medium, diced|
|Green pepper||1 , diced|
|Diced celery||1 1⁄2 Cup (24 tbs)|
|Bacon drippings||1⁄4 Cup (4 tbs)|
|Canned tomatoes||1 Quart|
|Tomato paste||3 Tablespoon|
|Hot sauce||2 Tablespoon (Or To Taste)|
|Shelled cooked shrimp||3 Cup (48 tbs)|
Saute onions, green pepper and celery in bacon drippings for 15 minutes or until tender and transparent but not brown.
Add tomatoes and tomato paste.
Simmer for 30 to 45 minutes longer or until thickened.
Add hot sauce.
Add shrimp; cook for 15 minutes before serving.
