Old Fashioned Cabbage Slaw
|Sugar||1⁄2 Cup (8 tbs)|
|Fennel seeds||1 Teaspoon, crushed|
|Tart red apples||2 Medium|
|Lemon juice||2 Tablespoon|
|Mayonnaise/Salad dressing||1 Cup (16 tbs)|
|Dairy sour cream||1⁄2 Cup (8 tbs) (From An 8-Ounce Carton)|
1. Trim the cabbage; quarter; shred fine. (You should have about 12 cups.) Combine with sugar, salt and the fennel seeds in a large bowl; toss to mix well; let stand at room temperature, tossing occasionally, about 1/2 hour; drain, discarding liquid.
2. Meanwhile, quarter and core the apples (do not pare); cut into very thin slices; toss with lemon juice in a small bowl.
3. Just before serving, blend the mayonnaise or salad dressing and sour cream in a small bowl. Toss apples with drained cabbage; pour dressing over shredded cabbage mixture; toss until ingredients are evenly coated.
