Gumbo

This chicken gumbo recipe is my mom's favorite & she loves to make it on her own.She throws in any & all kind of seafood that she can lay her hands on combined with bacon,chicken & beef. This sure will tickle your taste buds.
Ingredients
  Water 2 Quart (Plus 2 Beef Bouillon Cubes)
  Dried red pepper To Taste
  Salt 3 Teaspoon
  All purpose flour 4 Tablespoon
  Chopped okra 2 1⁄2 Cup (40 tbs) (Thawed)
  Garlic 3 Clove (15 gm), minced
  Celery ribs 2 , chopped
  Dried thyme leaves 1⁄2 Teaspoon
  Hot pepper sauce 1⁄2 Teaspoon
  Shrimp 1 Pound, cut in half (Peeled)
  Green onions 1 Bunch (100 gm), chopped
  Oysters 12 Ounce (Drained)
  Bay leaves 2
  Chopped ham 1 Cup (16 tbs)
  Bacon drippings 4 Tablespoon
  Vegetable oil 2 Tablespoon
  Onions 2 Medium, chopped
  Green pepper 1⁄2 , chopped
  Canned tomatoes 16 Ounce
  Tomatoes 16 Ounce
  Ketchup 4 Tablespoon
  Worcestershire sauce 1 Tablespoon
  Crab meat 1 Pound, cleaned
  Gumbo 1 Tablespoon
Directions

Combine stock, bay leaves, red pepper, ham and 2 teaspoons of the salt in large kettle. Bring to a boil over high heat. Reduce to medium.Cover and cook for 45 minutes.Meanwhile, make roux by heating bacon drippings in skillet over medium heat. Add flour to it & stir until absorbed. Cook over low heat, about 25 minutes, stirring constantly, until flour is brown(do not let it burn).Add oil, followed by okra, onions, garlic, green pepper and celery. Saute until tender,add tomatoes.Cook for more 5 minutes.Add saute vegetables to hot beef stock along with remaining 1 teaspoon salt,ketchup, thyme, hot pepper sauce and Worcestershire sauce. Cover and cook on low heat for 1 hour. Add shrimp, crab meat and green onions. Cook for about 40 minutes. Add gumbo file during last 30 minutes. Add oysters, during last 15 minutes.

Traditionally gumbo is made with seafood,it is usually found in the gulf coast of US.Gumbo is a thick stock served over rice or you can also serve it with bread as a dip.
