Turnip Slaw With Pineapple And Fresh Mint
|Turnips||1 Pound, peeled and grated (Purple Topped)|
|Pineapple/8 ounce can crushed pineapple, undrained||1 Cup (16 tbs), minced|
|Olive oil||3 Tablespoon|
|Lemon juice||1 Tablespoon|
|Minced mint||2 Tablespoon (1 1/2 Teaspoon Dried Mint Can Be Substituted, But The Fresh Herb Is Much Better In This Dish)|
The turnips and fresh pineapple are most easily prepared with a food processor.
Combine all the ingredients, tossing well, and chill at least 1 hour to blend flavors.
Garnish with fresh mint sprigs.
