Turnip Slaw with Pineapple and Fresh Mint

Ingredients
  Turnips 1 Pound, peeled and grated (Purple Topped)
  Pineapple/8 ounce can crushed pineapple, undrained 1 Cup (16 tbs), minced
  Olive oil 3 Tablespoon
  Lemon juice 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Minced mint 2 Tablespoon (1 1/2 Teaspoon Dried Mint Can Be Substituted, But The Fresh Herb Is Much Better In This Dish)
  Mint sprigs 4
Directions

The turnips and fresh pineapple are most easily prepared with a food processor.
Combine all the ingredients, tossing well, and chill at least 1 hour to blend flavors.
Garnish with fresh mint sprigs.
