Simple Shrimp Creole
|Chopped onion||1⁄2 Cup (8 tbs)|
|Green pepper||1 Medium, cut into matchstick-thin strips|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Spaghetti sauce||1 3⁄4 Cup (28 tbs) (Prego Al Fresco)|
|Medium shrimp||3⁄4 Pound, shelled and deveined|
|Hot pepper sauce||To Taste|
|Hot cooked rice||1 Cup (16 tbs)|
1. In 2-quart microwave-safe casserole, combine butter, onion, green pepper and celery. Cover with lid; microwave on high 4 minutes or until vegetables are tender, stirring once during cooking.
2. Stir in spaghetti sauce, shrimp, bay leaf, pepper and hot pepper sauce. Cover; microwave on high 6 minutes or until most shrimp are opaque, stirring once during cooking. Let stand, covered, 5 minutes or until all shrimp are opaque. Remove bay leaf. Serve over rice.
