1. In a pan, heat olive oil and saute onions and garlic, season with salt and pepper and cook until onions are soft.
2. Add in ham and the bone, and stir to mix.
3. Put in the black eyed peas and the soaking water, cover and cook for about 1 ½ hours or until the peas are tender.
4. Taste and adjust the seasoning.
5. Serve the peas hot with cooked rice and serve.
