Virginia Roast Pork
|Pork loin roast||4 Pound|
|Cider||2 Cup (32 tbs)|
|Chicken broth||3⁄4 Cup (12 tbs)|
Score fat on pork; stud with cloves.
Mix 1 teaspoon salt and 1/4 teaspoon pepper; sprinkle over roast.
Bake, uncovered, at 350 degrees, allowing 35 minutes per pound.
Baste with cider, adding small amount at a time.
Drain off fat.
Stir 2 tablespoons flour into pan drippings, blending well.
Add broth, stirring constantly, until thickened.
Stir in remaining salt and pepper.
