Jellied Waldorf Salad
|Red apples||3 Medium|
|Fresh lemon juice||1 Tablespoon|
|Lemon flavor gelatin dessert||3 Ounce (1 Box)|
|Hot water||1 Cup (16 tbs)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Diced celery||1 Cup (16 tbs)|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
|Heavy cream||1⁄2 Cup (8 tbs), whipped|
|Ripe olives||1⁄4 Cup (4 tbs)|
|Salad greens||1⁄2 Cup (8 tbs)|
Core apples, but do not peel.
Cut 1 into thin, even slices, and dice remaining 2.
Sprinkle sliced and diced apple with a small amount of lemon juice.
Arrange slices peel-side down, around bottom of a 5-cup ring mold.
Refrigerate all apples.
Dissolve gelatin in the water.
Chill until slightly thickened.
Add salt, and blend in mayonnaise.
Fold in diced apple, and remaining ingredients, except greens and olives.
Turn carefully into prepared mold, and chill until firm.
Unmold on greens, and garnish with olives.
