Spicy Southwestern Salad

Ingredients
  Yellow squash pieces 1 Cup (16 tbs), julienned to make matchstick pieces (Straight Neck Squash)
  Jicama pieces 1⁄2 Cup (8 tbs), pared and julienned to make matchstick pieces
  Apple 1⁄4 Pound, cored and cut into matchstick pieces (1 Small Sized)
  Sliced scallion 2 Tablespoon (Green Onion)
  Lettuce leaves 8
  Mixed vegetable juices 1⁄4 Cup (4 tbs) (Spicy)
  Balsamic vinegar/Red wine vinegar 1 Tablespoon
  Chopped fresh cilantro 1 1⁄2 Teaspoon (Chinese Parsley)
  Chopped fresh parsley 1 1⁄2 Teaspoon
  Olive oil 1 Teaspoon
  Garlic 1 Clove (5 gm)
Directions

1. In medium bowl combine first 4 ingredients; mix well. Line serving platter with lettuce leaves; top with squash mixture.
2. In blender combine remaining ingredients and process until smooth. Pour over salad.
