1-Hour Brunswick Stew
|Olive oil||1 Tablespoon|
|Onion||1 Medium, chopped|
|Boneless chicken breasts||1 Pound, skinned, all visible fat removed and cut into 1-inch cubes|
|Chopped tomatoes||1 1⁄2 Cup (24 tbs)|
|Canned no salt added tomato paste||6 Ounce (1 can)|
|Baby lima beans||10 Ounce (fresh or frozen)|
|Corn kernels||10 Ounce (fresh or frozen)|
|Homemade chicken stock||3 Cup (48 tbs)|
|Worcestershire sauce||1 Tablespoon|
|Fresh lemon juice||3 Tablespoon|
In a deep skillet or Dutch oven, heat oil over medium-high heat.
Add onion and saute until soft, about 3 minutes.
Add chicken pieces and remaining ingredients.
Reduce heat to low, cover and simmer 1 hour.
