Fruit Cobbler

  Peaches/3 large pears 6
  Lemon 1⁄2 , juiced
  Sugar 4 Teaspoon, divided
  Unbleached flour 3⁄4 Cup (12 tbs)
  Wheat germ 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Butter/Corn-free vegetable shortening 1⁄4 Cup (4 tbs)
  Baking soda 1⁄2 Teaspoon
  Water 1 Teaspoon
  Plain yogurt 1⁄2 Cup (8 tbs)

Peel, core, and slice peaches or pears to make 2 cups of fruit.
Place in a 7-inch baking dish.
Sprinkle with lemon juice and 2-3 tablespoons of the sugar.
Combine flour, wheat germ, salt, and the remaining 1 tablespoon sugar.
Cut in butter as for pie crust.
Dissolve baking soda in the 1 teaspoon water.
Stir into yogurt.
Stir yogurt mixture into flour mixture.
Pour over fruit.
Bake at 375° 40-50 minutes, or until fruit is soft and top is brown.
