|Peaches/3 large pears||6|
|Lemon||1⁄2 , juiced|
|Sugar||4 Teaspoon, divided|
|Unbleached flour||3⁄4 Cup (12 tbs)|
|Wheat germ||1⁄4 Cup (4 tbs)|
|Butter/Corn-free vegetable shortening||1⁄4 Cup (4 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Plain yogurt||1⁄2 Cup (8 tbs)|
Peel, core, and slice peaches or pears to make 2 cups of fruit.
Place in a 7-inch baking dish.
Sprinkle with lemon juice and 2-3 tablespoons of the sugar.
Combine flour, wheat germ, salt, and the remaining 1 tablespoon sugar.
Cut in butter as for pie crust.
Dissolve baking soda in the 1 teaspoon water.
Stir into yogurt.
Stir yogurt mixture into flour mixture.
Pour over fruit.
Bake at 375° 40-50 minutes, or until fruit is soft and top is brown.
