Navy Beans Cajun Style

Ingredients
  Olive oil 1 Teaspoon
  Dry shallots 3 , peeled and diced
  Celery stalk 1 , diced
  Carrots 2 , pared and diced
  Garlic 2 Clove (10 gm), smashed and chopped
  Dried navy beans 1 1⁄4 Cup (20 tbs), soaked 8 hours in cold water
  Cajun bean seasoning 2 Teaspoon
  Cayenne pepper 1⁄4 Teaspoon
  Sage 1⁄2 Teaspoon
  Thyme 1⁄2 Teaspoon
  Oregano 1 Teaspoon
Directions

Heat oil in saucepan over medium heat. Add vegetables and garlic; stir, cover and cook 6 minutes.
Add drained beans and mix. Incorporate remaining ingredients. Gradually pour in enough cold water to cover beans by 254 in (6.5 cm). Season generously with salt and pepper.
Cook, partly covered, 2 1/2 hours over medium heat. Stir several times, adding more water as needed.
