Iowa Corn Chowder
|Chopped salt pork||1⁄2 Cup (8 tbs)|
|Onion||1 , chopped|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Green pepper||1⁄2 , diced|
|Diced potatoes||1 1⁄2 Cup (24 tbs)|
|Water||2 Cup (32 tbs)|
|All purpose flour||4 Tablespoon|
|Milk||2 Cup (32 tbs)|
|Light cream||1⁄2 Cup (8 tbs)|
|Fresh corn cut from cob||2 Cup (32 tbs)|
Brown salt pork in heavy saucepan.
Add onion; cook for 2 minutes.
Add next 6 ingredients.
Simmer until potatoes are tender.
Mix flour with a little milk; add with remaining milk to potato mixture.
Heat until thickened.
Add cream and corn.
