Pickled Idaho Prune Plums
|Fresh prune plums||4 Pound|
|Cider vinegar||3 Cup (48 tbs)|
|Sugar||4 Cup (64 tbs)|
|Whole cloves||1 Tablespoon|
|Ginger root piece||1|
|Whole allspice||1 Teaspoon|
Wash plums and prick each with fork.
Combine vinegar and sugar in kettle and add spices, tied loosely in cheesecloth bag.
Cook, covered, for 10 minutes.
Reduce heat, add plums, and simmer gently for 10 minutes longer.
Remove spice bag.
Pack in hot sterilized jars, cover with boiling syrup, and seal.
