Apple Cider Waldorf Salad

Ingredients
  Apple cider/Apple juice 5 1⁄4 Cup (84 tbs)
  Grated orange rind 1⁄2 Cup (8 tbs)
  Lemon jelly powder 36 Gram (3 regular-size package)
  Salt 1⁄2 Teaspoon
  Red skinned apples 8 , diced
  Diced avocado 1 (optional)
  Lemon juice 1⁄4 Cup (4 tbs)
  Coarsely chopped pecans 1 Cup (16 tbs)
  Diced celery 1 1⁄2 Cup (24 tbs)
  Sugar To Taste
Directions

Boil 2 cups apple cider with the orange rind and add the jelly powder.
Stir until completely dissolved.
Remove from heat and add remaining cider and salt.
Chill until cold.
Meanwhile, dice apples and avocado into the lemon juice and toss to keep from discoloring.
Add the chilled jelly, nuts, celery and sugar.
Pour the mixture into a rinsed or oiled 12-cup mold.
Cover with plastic film and chill overnight.
Unmold and garnish.
