1 cup white rice
1 1/2 cups water
Salt to taste
Juice 1/4 lemon
1 large lump butter
Put all together in a heavy saucepan and let come to a boil, then stir just once with a long-pronged fork.
Turn down flame low and let cook until water has cooked out, about 20 minutes.
Dish out of pan with a fork and toss lightly into serving dish.
The rice will be light, dry and flaky.
