2 cups peeled diced apple
1 cup diced unpeeled red apple
1 cup diced celery
1/2 cup chopped walnuts or pecans
Thick mayonnaise or salad dressing
Pour orange juice into a bowl.
Dice apples into the juice, stopping and stirring occasionally until all pieces are coated to prevent discoloring.
Chill for a few minutes, then drain apple thoroughly and add celery, walnuts and just enough mayonnaise or salad dressing to moisten.
Taste and add a little sugar if apples are tart.
Pile in a lettuce-lined bowl and top with a few whole walnuts and sliced Maraschino cherries if you wish.
Tuck a few sprigs of water cress here and there.
