Cocktail Reubens

  Toasted cocktail rye bread slices 36
  Thousand island dressing 1⁄2 Cup (8 tbs)
  Canned sauerkraut 8 Ounce, drained, rinsed (1 Can)
  Thinly sliced corned beef 1⁄4 Pound
  Swiss cheese slices 12 Ounce, each slice cut into 2 inch squares (2 Packages, 6 Ounce Each)

Arrange bread slices on baking sheet. Toast bread on one side.
Preheat oven in Convection Bake to 375°F (*350°F).
Spread each slice with 3/4 teaspoon Thousand Island dressing.
Add small amount of sauerkraut and corned beef to each slice.
Top each with 1 square Swiss cheese.
Convection Bake for 5 to 8 minutes or until cheese melts and edges are lightly browned.
