Stir Fried Creole Gumbo
|Water||1 1⁄2 Cup (24 tbs)|
|Onion||1⁄2 Cup (8 tbs), chopped|
|Garlic||1 Clove (5 gm)|
|Canned tomatoes||16 Ounce (1 Can)|
|Green pepper||1 Cup (16 tbs), chopped|
|Hot pepper sauce/Cayenne pepper||1⁄2 Teaspoon|
|Crabmeat white rice||2 Can (20 oz)|
In a large soup pan, make tender the onion and garlic in butter.
Blend in flour, stirring constantly until golden.
Add undrained compressed tomatoes, green pepper, spices, hot sauce, water and salt.
Boil, reduce heat, and simmer covered for 20 min Remove bay leaves.
Add sliced okra; boil.
Cut up large peeled shrimps and throw shrimp and crabmeat in potion.
Heat thoroughly about 5 minutes.
Pour concoction over white rice.
Garnish with a couple of steamed cherrystone clams (optional).
