Creole Sauce

Ingredients
  Peeled chopped cored tomato 3 Quart
  Chopped onion 2 Cup (32 tbs)
  Chopped sweet red peppers 1 Cup (16 tbs)
  Garlic 1 Clove (5 gm), minced
  Hot red pepper 1 , finely chopped
  Chopped parsley 1 Tablespoon
  Sugar 1 Tablespoon
  Salt 2 Teaspoon
  Marjoram 1⁄2 Teaspoon
  Chili powder 1⁄4 Teaspoon
Directions

Combine all ingredients in a large sauce pot.
Cook slowly until thick, about 1 1/2 hours.
Stir frequently to prevent sticking.
Pour hot into hot jars, leaving 1-inch head space.
Adjust caps.
Process pints 25 minutes, quarts 30 minutes at 10 pounds pressure.
