Southwestern Spinach Salad
|Picante sauce||1⁄2 Cup (8 tbs)|
|Prepared italian salad dressing||1⁄4 Cup (4 tbs)|
|Ground cumin||1⁄4 Teaspoon|
|Fresh baby spinach||4 Cup (64 tbs)|
|Canned black beans||15 Ounce, rinsed and drained (1 Can)|
|Sliced fresh mushrooms||1 Cup (16 tbs)|
|Sweet red pepper||1 Medium, julienned|
|Sliced red onion||1⁄2 Cup (8 tbs)|
|Bacon strips||8 , cooked and crumbled|
|Hard-cooked eggs||4 , sliced|
In a small bowl, combine picante sauce, salad dressing and cumin.
In a salad bowl, combine spinach, beans, mushrooms, pepper, onion and bacon.
Drizzle with dressing; toss to coat.
Garnish with eggs.
