Banana Coconut Betty
|Soft bread crumbs||2 Cup (32 tbs)|
|Butter||6 Tablespoon, melted|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Orange peel||2 Teaspoon, grated|
|Ground nutmeg||1⁄4 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Banana||4 Cup (64 tbs), sliced|
|Orange juice||1⁄4 Cup (4 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Flaked coconut||1⁄2 Cup (8 tbs)|
Preheat oven to 375°.
Toss crumbs with melted butter or margarine to coat.
Line a 1 1/2-quart casserole with one-third of the crumb mixture.
Combine sugar, orange peel, nutmeg, and cinnamon.
Cover crumbs with half the sliced banana and half the sugar mixture.
Cover with another one-third of the crumbs, the remaining banana, and remaining sugar mixture.
Combine orange juice and water; spoon over.
Toss the remaining crumbs with flaked coconut; sprinkle over all.
Bake, covered, at 375° for 30 to 35 minutes.
Uncover; bake till golden, 5 to 10 minutes more.
