Cajun Red Bean And Sausage Casserole
|Dried kidney beans||1 Pound|
|Salt pork/Ham||1⁄2 Pound, diced|
|Chopped onions||3 Cup (48 tbs)|
|Chopped green onions||1 Cup (16 tbs)|
|Chopped fresh parsley||1 Cup (16 tbs)|
|Smoked sausage||1 Pound, cut into 1/4 inch slices|
|Canned tomato sauce||8 Ounce (1 Can)|
|Worcestershire sauce||1 Tablespoon|
|Seasoned salt||1 Tablespoon|
|Garlic powder with parsley||1⁄2 Teaspoon|
|Hot pepper sauce||1⁄2 Teaspoon|
Place beans in large, heavy Dutch oven.
Add water to level 2 inches above beans; let soak overnight.
Add salt pork, bring to a boil; reduce heat, cover and simmer 30 minutes.
Stir in remaining ingredients.
Cover and simmer 45 minutes to 1 hour or until beans are tender.
