Cajun Soft-Shell Crabs
|Margarine/Butter||1⁄4 Cup (4 tbs)|
|Onion||1 Small, minced|
|Garlic||3 Clove (15 gm), minced|
|Minced parsley||2 Tablespoon|
|Red pepper flakes||1⁄4 Teaspoon (Or To Taste)|
|Chili powder||1 Teaspoon|
|Whole wheat bread crumbs||2 Cup (32 tbs)|
|Soft-shell crabs||8 , cleaned|
|Canola oil||2 Tablespoon (For Brushing Skewers, Grid, And Crabs)|
Melt margarine in a frying pan over medium heat.
Saute onion and garlic, stirring occasionally.
Mix parsley, pepper, and chili powder.
Mix in bread crumbs and continue cooking until crumbs are slightly toasted, about 3 to 5 minutes.
Thread crabs crosswise onto skewers.
Brush with oil.
Preheat the grill.
Set skewers on grid over ashen coals.
Grill for 6 minutes, turning once.
Crabs will turn a reddish color when done.
