|Sliced fresh mushrooms||1 Cup (16 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Rice||1 Cup (16 tbs) (Branded)|
|Chicken broth||2 Cup (32 tbs)|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Shredded monterey jack cheese||1 Cup (16 tbs)|
In a large saucepan, melt butter or margarine.
Add mushrooms and onion.
Saute' until golden.
Add rice, chicken broth, wine and salt; stir.
Bring to a boil and cover.
Simmer 20 minutes.
Remove from heat.
Let stand, covered, until all liquid is absorbed, about 5 minutes.
Fold in cheese.
