1 Arrange 4 slices buttered toast in a row; top each with lettuce, 2 slices tomato and 3 strips bacon; add a second slice of toast, then lettuce and a slice each of ham and cheese.
2 Spread remaining toast with mustard or mayonnaise; lay, spread side down, on top of cheese; insert 4 wooden picks into each sandwich to hold it together; cut each diagonally into 4 triangles; stick olives and gherkins onto ends of wooden picks.
