Chicken Luau

Ingredients
  Chicken 1 , cut up (frying)
  Shortening 2 Tablespoon
  Water 1⁄2 Cup (8 tbs)
  Spinach 1 1⁄2 Pound
  Coconut cream 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Brown chicken pieces in shortening and sprinkle with salt and pepper.
Add water, cover, and simmer until chicken is tender.
Meanwhile, wash spinach and remove stems.
Cut leaves into 1-inch pieces.
Steam with a little water until spinach is tender.
Drain spinach and chicken and combine.
Add coconut cream and heat but do not boil.
