Cajun Patties

  Lean ground pork 1 1⁄2 Pound
  Cracked pepper 1 Teaspoon
  Vegetable cooking spray 1 Tablespoon
  Frozen unsweetened apple juice concentrate 1⁄4 Cup (4 tbs), thawed and undiluted
  Pineapple preserves 3 Tablespoon
  Prepared horseradish 1 Tablespoon
  Dry mustard 2 1⁄4 Teaspoon
  Neufchatel cheese 3 Ounce, softened

Combine pork and pepper in a medium bowl; stir well.
Shape mixture into 6 (3/4-inch-thick) patties.
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
Add pork patties, and cook 7 minutes on each side.
Drain and pat dry with paper towels.
Wipe drippings from skillet with a paper towel.
Combine apple juice concentrate and next 3 ingredients in skillet, stirring well.
Return patties to skillet; cook over low heat until thoroughly heated.
Transfer patties to a serving platter; keep warm.
Beat Neufchatel cheese in a small bowl at medium speed of an electric mixer until smooth; spread evenly over pork patties.
Spoon apple juice concentrate mixture evenly over patties, and serve immediately
