Southern Luncheon Bake
|Fully cooked boneless rolled ham slices||6 (1/2 Inch Thick)|
|Whole cloves||1 Dozen (Adjust Quantity As Needed)|
|Canned pineapple slices||6|
|Butter/Margarine||2 Tablespoon, melted|
|Mashed sweet potatoes||2 Cup (32 tbs) (Cooked / Canned)|
|Whole cranberry sauce||1 Cup (16 tbs)|
|Grated orange peel||1 Teaspoon|
|Orange juice||1⁄2 Cup (8 tbs)|
|Brown sugar||2 Tablespoon|
Stud sides of ham slices with cloves; arrange in 13x9x2-inch baking dish: top each with pineapple ring.
Beat butter and salt into potatoes; mound atop pineapple.
In saucepan, combine cranberry sauce, orange peel, juice, and brown sugar; simmer about 5 minutes, stirring frequently; drizzle over potatoes.
Bake in moderate oven (350°) 40 to 45 minutes, basting once or twice with sauce.
