Maryland Style Chicken

  Flour 3⁄4 Cup (12 tbs)
  Salt 1 1⁄2 Teaspoon
  Celery salt 1⁄2 Teaspoon
  Paprika 1⁄2 Teaspoon
  Garlic salt 1⁄8 Teaspoon
  Pepper 1⁄4 Teaspoon
  Chicken 3 Pound, cut up
  Eggs 2
  Water 1⁄4 Cup (4 tbs)
  Fine dry bread crumbs 1 Cup (16 tbs)
  Cooking oil 1⁄2 Cup (8 tbs)
  Hot water 3 Tablespoon
  Cream gravy 1 Cup (16 tbs)

Heat oven to 375 degrees.
Combine flour, salt, celery salt, paprika, garlic salt and pepper in a paper bag.
Add chicken pieces, one or two at a time and shake bag to coat chicken well with flour mixture.
Beat eggs and 1/4 cup water together with a fork in a flat dish.
Dip chicken pieces in mixture and shake to remove excess.
Roll in crumbs.
Heat oil in large heavy skillet and add chicken pieces.
Cook gently until golden on all sides.
Transfer chicken pieces to a baking dish (about 13 x 9 1/2 x 2 inches) as they brown.
Add hot water to skillet, stir well, scraping up all browned bits and pour over chicken.
Bake uncovered about 45 minutes, or until chicken is very tender.
