Virginia Green Corn Pudding
|Fresh corn||2 Cup (32 tbs)|
|Eggs||2 Large (Or 3 Small)|
|Thin coffee cream||1 Cup (16 tbs)|
|Cayenne pepper||To Taste|
|Grated nutmeg||To Taste|
|Flour||1 1⁄2 Tablespoon|
|Minced green pepper||1 Tablespoon|
Cut corn off cob, being sure to scrape all pulp out with knife as this helps thicken pudding.
Mix corn with flour, seasonings, and green pepper (if used).
Beat eggs very light, add to corn mixture; add cream.
Melt butter and add, saving out a little to grease baking dish.
Pour mixture into baking dish; set in a pan of warm water, bake in moderate (350-degree oven) for about 30 minutes, or until custard is firm.
